FROM MY TABLE TO YOURS - Receipe received from The Village B&B, HATFIELD
ROULADE
Ingredients:
125 ml cake flour
60 ml margarine
4 extra large eggs - separated
500 ml milk
7 ml mustard powder
Pinch salt
Pinch cayenne pepper
Filling:
Onion – finely chopped
Green pepper – finely chopped
Red pepper – finely chopped
Grated cheese
Finely chopped parsley – to taste
Method:
Line Swiss roll tin with baking paper.
Melt margarine in a pot and add flour to melted margarine. Mix well.
Remove from the heat and slowly add a little of the milk while stirring well to make a smooth paste. Add rest of the milk and stir well. Return to the heat and cook till thick whil stirring continuously. Add the mustard powder, salt and cayenne pepper.
Remove from heat and allow to cool a little bit.
Beat the egg yolks until light and stir into milk mixture.
Beat egg whites until stiff and fold into milk mixture.
Pour into prepared pan and bake for 40 minutes.
Let cool, pull paper off, spread filling on top and roll up like a Swiss roll.
Filling method:
In a pan fry the onion and peppers until done.
Spread this mixture on the baked egg mixture.
Spread the grated cheese on top.
Top with a little finely chopped parsley.
Roll up roulade.
To Serve:
Cut into slices like a Swiss roll.
